In the northeast of Bavaria, not far from the Munich airport, there is a small town of Freising. In the past it was the capital of Bavaria, where until the present time there is Bavarian Bishop’s residence, and on a nearby hill, on the very spot, where it currently operates a modern brewery Weihenstephan, in the VIII century, approximately 725 year the Church of St. Stephen with several cells of the Bishop surrounding was founded. By 1040 it acquired the dimensions of a Benedictine monastery and in the same year received permission from the Bishop Engelbert Fraizinsky for the official beer brewing and saling.
Of course it was not as smooth as it seems. In medieval times, barbaric and bloodthirsty, numerous destructive and devastating raids, plague, and famine, fully washed monastery from the face of the earth. But the hardworking Benedictine monks again and again stubbornly returned their monastery and brewery, constantly improving their skills in the brewing.
The following years were not as harsh for the existence of the monastery, and some years were even conducive for growth and prosperity. But good times became fatal for the Benedictine monastery: by the nineteenth century, the Benedictine Abbey of St. Stephen ceased to exist, and its famous at that time brewery has acquired the status of Royal Bavarian state brewery Weihenstephan. The building of the monastery was turned into an agricultural school, which in 1895 was renamed into the Academy of agriculture and brewing, and later joined the technical University of Munich.
